To keep your beans fresh, avoid breaking the vacuum seal on a daily basis for your regular servings, as this will allow CO2 to escape and oxygen to enter the canister. Any leftover beans should be stored in a vacuum canister for optimal preservation.
It's common for people to mistakenly select the biggest vacuum canister, but if you're only buying up to 500g of beans, it's far more effective to get 2-3 smaller canisters. Opening and resealing a large canister daily compromises the vacuum, letting in oxygen and CO2. These canisters are meant for beans you'll use within 1 to 10 weeks, and repeatedly breaking the vacuum can work against your efforts to keep them fresh.
