The M3 burr is actually the conical burr set from the Baratza Virtuoso+ grinder. It has a slightly different geometry and is made from a different steel alloy than the M2. The M2 is the original burr that comes with the Encore
The M3 burr produces a much more consistent grind, especially at the finer settings. It is designed to be more precise and to create fewer fines (very small coffee particles).
Because of its more precise grind I recommend for Encore owners who want to improve the quality of their coffee, particularly for pour-over, Aeropress, or even entry-level espresso, to upgrade to the M3 burr.
