Comandante C40 Lab Series ā
burrs for light roast specialty
š§Ŗ COMANDANTE C40 LAB Series ā Three Burrs, Three Ways to Explore Coffee
The C40 LAB Series turns something normally hidden inside the grinder into part of the brewing experiment:
the burr itself.
Comandante currently offers three different LAB Series burr geometries:
āļø NITRO BLADEĀ®
šØ HAMMERHEADĀ®
š¦ TIGERSHARKĀ®
They should not be understood as:
good ā better ā best.
Instead, each geometry approaches the coffee bean differently and can influence particle distribution, extraction behaviour and ultimately the sensory experience in the cup.
The question becomes less:
āWhich Comandante is best?ā
and more:
āWhich burr character do I want to explore?ā
āļø NITRO BLADEĀ® ā The Original Game Changer
Clarity, Consistency & Proven All-Round Performance
The NITRO BLADEĀ® is the burr geometry that established the modern Comandante C40 as one of the reference hand grinders in specialty coffee.
Bernd Braune originally developed it because he wanted the grind quality and flavour clarity associated with serious professional grinding equipment in a hand grinder compact enough to travel with.
Its distinctive cutting geometry is engineered for:
⨠Refined particle distribution
šø High flavour clarity
āļø Excellent consistency
šØ Reduced coffee dust and unwanted fines
ā A broad espresso-to-filter range
šļø Comfortable manual grinding
The Nitro Blade uses tiny micro-cutting edges on its characteristic teeth to engage coffee cleanly while maintaining manageable grinding torque.
It is the classic all-round LAB choice.
We would choose NITRO BLADEĀ® for:
āļø Brewers wanting one proven burr for almost everything
āļø V60, AeroPress and filter coffee
āļø Espresso and moka pot
āļø Cupping and sensory evaluation
āļø Balanced particle distribution
āļø Coffee drinkers prioritising clarity and consistency
āļø Anyone unsure which LAB burr to choose
š CoffeeNose interpretation
Think of Nitro Blade as the reference point.
It is the burr we would use when we want to understand the coffee without deliberately pushing the extraction towards a particular character.
Clean.
Precise.
Versatile.
An excellent benchmark against which to compare the more experimental HAMMERHEAD and TIGERSHARK geometries.
šØ HAMMERHEADĀ® ā Dense, Juicy & Structured
Born from an Exceptional Yellow Pacamara
The story of HAMMERHEADĀ® started with a very specific coffee.
Comandante founder Bernd Braune was working with a tiny lot of Yellow Pacamara whose unusually large, dense beans could deliver a vibrant combination of florals, juiciness, sweetness and velvety complexityābut only when the grind was exactly right.
That inspired a radically different question:
What if you designed a burr around the characteristics of exceptional large and dense coffee beans?
The resulting HAMMERHEADĀ® uses a distinctive Hexagonal Block Blade geometry, visually inspired by the shape of a hammerhead shark.
It was initially developed around large Pacamara beans but was subsequently refined to perform across a much wider range of coffees.
Its sensory direction is particularly interesting when you enjoy:
š Defined fruit character
šÆ Structured sweetness
š«§ Dense, juicy mouthfeel
šø Aromatic complexity
š Fruit-forward coffees with texture
ā A fuller presentation without sacrificing definition
We would choose HAMMERHEADĀ® for:
āļø Pacamara and other large-bean varieties
āļø Dense high-altitude coffees
āļø Juicy washed coffees
āļø Fruit-forward specialty coffee
āļø Brewers who enjoy sweetness and texture
āļø Coffee lovers looking for more body without losing fruit definition
āļø Experimental comparative brewing
š CoffeeNose interpretation
If Nitro Blade is our neutral reference, HAMMERHEAD is the version we would reach for when we want to explore:
fruit + sweetness + structure.
Think juicy rather than simply delicate.
Defined rather than thin.
Sweetness with enough body to make the coffee feel substantial in the mouth.
It could be particularly fascinating with a big Pacamara, Bourbon, Kenyan coffee or expressive high-altitude Central American lot.
š¦ TIGERSHARKĀ® ā Cutting Through Dense Light Roasts
The Most Radical LAB Series Geometry
TIGERSHARKĀ® takes the LAB philosophy even further.
It was developed after Comandante experimented with particularly dense, lightly roasted coffee beans whose higher density and reduced brittleness cause them to fracture differently from more developed roasts.
Traditional burrs largely crush and fracture the beans.
TIGERSHARK introduces Comandanteās distinctive:
š¦ Double Shark-Tip Blade Structure
The dual-row cutting geometry is designed to:
šŖ Slice
š„ Fracture
āļø Refine
dense material efficiently.
This makes TIGERSHARK especially intriguing for the kind of coffees increasingly found at the extreme end of modern specialty coffee:
šø Nordic-style light roasts
ā°ļø Very dense high-altitude coffees
š Gesha and rare varieties
š Washed Kenyan coffees
šæ Lightly developed Ethiopian coffees
š§Ŗ Competition and experimental microlots
The concept proved sufficiently robust that Comandante also experimented with semi-elastic grains such as spelt and ryeāone reason the burr uses extremely tough, corrosion-resistant Nitro RexĀ® steel.
We would choose TIGERSHARKĀ® for:
āļø Very light roasted specialty coffee
āļø Dense high-altitude beans
āļø Nordic-style roast profiles
āļø Gesha and rare microlots
āļø Coffee geeks interested in burr mechanics
āļø Travelling and expedition use
āļø Brewers deliberately exploring how cutting geometry changes extraction
š CoffeeNose interpretation
TIGERSHARK is the most obviously experimental of the three.
This is the burr we would choose when the coffee itself presents a mechanical challenge:
hard, dense, lightly roasted and reluctant to fracture.
Rather than simply forcing those beans through a conventional geometry, TIGERSHARK changes the way they are attacked.
For us, that makes it particularly interesting with coffees where clarity, aromatics and delicate origin character justify the extra experimentation.

Important
These are not rigid flavour guarantees.
Burr geometry interacts with the beans and the brew:
š« Bean variety
ā°ļø Density
š„ Roast development
āļø Grind size
š§ Water composition
š”ļø Temperature
š Filter
š Agitation
āļø Brew ratio
The table is intended as a useful guide to the design philosophy of each burr, not a promise that one particular flavour will always appear.
šÆ Which C40 LAB Series Should You Choose?
āļø Choose NITRO BLADEĀ® if...
You want the safest and most versatile choice.
You brew many different coffees and brewing methods and want exceptional consistency, clarity and an established reference burr.
CoffeeNose shorthand:
⨠CLASSIC · CLEAR · VERSATILE
šØ Choose HAMMERHEADĀ® if...
You love coffees that are:
š Juicy
šÆ Sweet
š«§ Textural
šø Fruit-forward
ā°ļø Dense and expressive
It is particularly interesting if Pacamara and high-altitude Central American or similarly structured coffees regularly appear in your collection.
CoffeeNose shorthand:
š JUICY Ā· SWEET Ā· STRUCTURED
š¦ Choose TIGERSHARKĀ® if...
You regularly buy:
šø Very light roasts
š Gesha
š Dense Kenyan coffees
šæ High-altitude Ethiopian lots
š„ Nordic-style specialty coffee
š§Ŗ Competition-level microlots
and you genuinely enjoy experimenting with extraction.
CoffeeNose shorthand:
š¦ DENSE Ā· LIGHT Ā· EXPERIMENTAL
š CoffeeNose Experiment ā Same Coffee, Three Burrs
If we had all three grinders on the Amsterdam Coffee Lab table, this is exactly how we would compare them.
Take one exceptional coffee.
Keep constant:
āļø Dose
š§ Water
š”ļø Temperature
š Filter paper
š Pour structure
ā±ļø Brewing method
Then individually dial in:
āļø NITRO BLADEĀ®
šØ HAMMERHEADĀ®
š¦ TIGERSHARKĀ®
Do not force all three grinders to use the same click number.
Instead, optimise each grinder until the coffee extracts properly.
Then taste blind.
Compare:
šø Aromatic intensity
š Acidity
šÆ Sweetness
š Fruit definition
⨠Clarity
š«§ Body
š Texture
ā³ Length of finish
That is where the LAB Series concept becomes genuinely valuable.
It changes the conversation from:
āWhich burr has the best specifications?ā
to:
āWhich expression of this coffee do I enjoy most?ā
And that is exactly the kind of question we like asking at Amsterdam Coffee Lab.
š« WB.coffee Coffees to Explore with Each Burr
āļø NITRO BLADEĀ®
A fantastic reference grinder for almost everything:
šø Ethiopia Guji Majesty ā Washed
š FJ ā Fruity & Juicy
FF ā Fruity & Floral
š Changing WB.coffee single origins
Use Nitro Blade when you want a balanced reference expression before changing other variables.
šØ HAMMERHEADĀ®
We would particularly like to experiment with:
š Fernando DĆaz ā Guatemala Orange Bourbon ā Washed
š Kenya Currant Crush ā Kirinyaga ā Double Washed
š Pineapple Express ā El Salvador Bourbon ā Anaerobic Natural
š Big-bean Pacamara and similar limited editions when available
Look for coffees combining fruit intensity, sweetness and substantial texture.
š¦ TIGERSHARKĀ®
This is where we would bring out some of the exciting stuff:
š Guatemala Geisha ā Finca Inferno ā Washed
š Kenya Currant Crush ā Kirinyaga ā Double Washed
šø Ethiopia Guji Majesty ā Landrace ā Washed
šæ Light-roasted limited editions
š§Ŗ Rare high-density competition coffees
The denser and more unusual the coffee, the more interesting the experiment becomes.
ā¤ļø Why We Like the Complete LAB Series at WB.coffee
The real brilliance of the LAB Series is not that Comandante claims to have discovered one ultimate burr.
It is almost the opposite.
Comandante acknowledges that taste is subjective.
Different people want different things from coffee.
One brewer searches for maximum clarity.
Another wants sweetness and juicy texture.
Another deliberately buys extremely light-roasted, high-density coffee and wants to discover how changing the cutting geometry changes the extraction.
The three LAB burrs give us three fascinating perspectives:
āļø NITRO BLADEĀ® ā the benchmark
šØ HAMMERHEADĀ® ā the fruit-and-structure explorer
š¦ TIGERSHARKĀ® ā the dense-light-roast experiment
For a normal coffee drinker, this level of detail may be completely unnecessary.
For us?
This is exactly where coffee gets interesting.
Same bean.
Same water.
Same brewer.
Different burr.
Different cup.Ā
Taste it. Compare it. Decide for yourself. š
