La Marzocco KB90 AV ABR – Full Inox – 2 Group

⚖️ Ultimate Workflow. Espresso by Weight. Built for Serious Volume.

The La Marzocco KB90 AV ABR 2 Group in Full Inox stainless steel is built around one central idea:

Make exceptional espresso faster, cleaner and easier for the barista.

Designed for high-volume specialty coffee bars, restaurants, hotels and hospitality environments, the KB90 combines La Marzocco’s legendary thermal stability with three technologies that fundamentally improve workflow:

    🔄 Straight-In Portafilter

⚖️ Auto Brew Ratio with integrated scales

    💨 Automatic Steam Flush

The ABR version goes beyond traditional volumetric dosing. Precision scales beneath each group measure the beverage in the cup, while Drip Prediction calculates when the machine should stop the extraction so that the final espresso reaches the programmed target weight.

    Less manual weighing.

    Less wrist strain.

    Less cleaning during service.

    More repeatable espresso. ☕⚖️

⚖️ ABR – Auto Brew Ratio

Stop Espresso by Weight, Not Just by Water Volume

Traditional automatic espresso machines use volumetric dosing.

They measure the quantity of water passing through the machine and stop the extraction after the programmed amount has been delivered.

That's convenient—but the amount of espresso actually reaching the cup can still vary.

    Coffee absorbs water.

    Flow changes.

    Crema changes.

    Different beans behave differently.

The KB90 ABR adds integrated precision scales underneath the drip tray.

The machine can therefore control the quantity that actually matters:

☕ The beverage weight in the cup.

La Marzocco's Auto Brew Ratio system integrates the scales directly into the machine electronics, allowing the barista to work with espresso recipes based on mass rather than relying solely on volumetric water measurements.

    🧠 Drip Prediction – Smarter Weight-Based Espresso

Stopping the pump at exactly 40.0 grams does not necessarily give you a finished espresso of 40.0 grams.

Coffee continues dripping from the portafilter for a moment after pressure stops.

Traditional scale-controlled systems therefore require a fixed offset.

    For example:

    Target: 40 g

    Stop pump: 37 g

    Expected remaining drips: 3 g

But that final drip behaviour changes depending on:

    🫘 Coffee

    ⚙️ Grind size

    📆 Freshness

    ☕ Dose

    💧 Flow rate

    🧺 Basket

    ⏱️ Extraction

The KB90's Drip Prediction algorithm predicts this behaviour and determines when to stop brewing so that the final beverage reaches the desired target mass.

    Why this is so useful

    ✅ More accurate espresso output

    ✅ Less manual scale watching

    ✅ Better shot-to-shot repeatability

    ✅ Easier switching between coffees

    ✅ Better consistency between baristas

✅ Less need for manually programmed offsets

✅ Faster workflow during peak service

Switch from a traditional espresso blend to decaf or a fruit-forward single origin and the system adapts much more intelligently than a simple fixed offset.

📊 Mass Mode & Brew Ratio Thinking

The ABR system allows the coffee recipe to become part of the machine workflow.

    Instead of thinking only:

“How long should this espresso run?”

    you can work with:

Dry coffee dose → finished beverage weight

    For example:

    ☕ House Espresso

    18 g coffee → 38 g espresso

    🍓 Modern Single Origin

    18 g coffee → 45 g espresso

    🥛 Cappuccino Blend

    19 g coffee → 38 g espresso

This is how modern specialty coffee recipes are actually developed.

The machine takes care of stopping the extraction.

    The barista can focus on:

    👅 Taste

    🥛 Milk texture

    ☕ Presentation

    🤝 The customer

    🔄 Straight-In Portafilter

    Goodbye Traditional Twist

The KB90 introduced one of La Marzocco's most radical workflow innovations:

    The Straight-In Portafilter.

Instead of inserting the portafilter and twisting it firmly into a conventional bayonet group, the KB90 uses a straight-in locking movement.

    Insert.

    Lock.

    Extract.

The movement is faster and considerably more ergonomic during repetitive high-volume service.

La Marzocco specifically developed the system to reduce repetitive wrist strain experienced by professional baristas.

In a busy coffee bar this means:

    ✅ Less repetitive twisting

    ✅ Reduced barista wrist strain

    ✅ Faster portafilter insertion

    ✅ More natural movement

✅ Better ergonomics during long shifts

✅ Seconds saved across hundreds of drinks

    One second doesn't sound important.

Multiply it by several hundred drinks and several baristas every day.

    Then it becomes workflow.

    💨 Automatic Steam Flush

The Group Cleans Itself After Every Extraction

Coffee oils and small particles gradually accumulate around the shower screen and brew path.

During a busy service, groups may not be manually flushed as consistently as they should be.

The KB90 helps solve this automatically.

After extraction, the machine performs its Steam Flush cycle:

💨 First: a short burst of steam

This helps loosen and purge coffee residue.

    💧 Then: a hot-water flush

This clears the group and prepares it for the next extraction.

    The benefits

✅ Cleaner group heads during service

    ✅ Less accumulated coffee residue

    ✅ Cleaner-tasting espresso

✅ Reduced need for constant manual flushing

    ✅ Faster workflow

✅ Longer intervals between intensive group cleaning during service

It does not replace proper daily backflushing and detergent cleaning.

But it greatly improves cleanliness between shots.

👃 Why Steam Flush Matters for Flavour

    Old coffee oils taste:

    ❌ Bitter

    ❌ Burnt

    ❌ Rancid

    ❌ Dirty

If you're serving carefully roasted specialty coffee, it makes very little sense to allow residue from the previous fifty espressos to interfere with the next one.

Steam Flush is therefore not simply a convenience feature.

    It is a flavour-consistency feature.

Clean equipment lets the coffee speak.

    🌡️ Independent Brew Boilers

    The 2-group KB90 has:

    2 × 1.3 litre independent coffee boilers

Each group therefore has its own dedicated brew boiler.

This makes it possible to maintain exceptional temperature stability and—importantly—to work with different coffees at different temperatures.

    For example:

    Group 1

    🏰 House espresso blend

    93°C

    Group 2

    🌸 Light-roasted single origin

    94.5°C

Each group can be optimised for the coffee assigned to it.

This is a major advantage for specialty coffee bars serving both a house blend and rotating single-origin espresso.

    ♨️ Saturated Group Technology

La Marzocco's saturated-group architecture keeps the brew group thermally connected to the coffee boiler.

    The objective is simple:

Stable temperature at the coffee puck.

    Temperature instability changes extraction.

Even a small variation can influence:

    🍋 Acidity

    🍯 Sweetness

    🍫 Bitterness

    🌸 Aromatics

    👅 Balance

In a high-volume café, consistency matters not only for the first espresso of the morning.

    It needs to remain stable:

    shot after shot after shot.

    💧 Thermal Stability System

Before fresh water enters the coffee boiler, it is preheated.

That reduces the thermal disturbance caused by incoming water and supports stable brewing temperatures during repeated extractions.

    Combined with:

    🌡️ PID control

    ♨️ Saturated groups

    🔥 Independent brew boilers

    🧥 Insulated boilers

the KB90 is designed for exactly the situation where less capable machines struggle:

A queue of espresso orders that doesn't stop.

    🔥 7-Litre Steam Boiler

    The two-group KB90 uses a substantial:

    7 litre steam boiler

This provides the capacity required for high-volume milk service.

    Think:

    🥛 Cappuccino

    🤎 Flat white

    ☕ Latte

    🍫 Mocha

    🌱 Oat barista drinks

🥛 Large milk orders during breakfast service

Two baristas can brew and steam simultaneously without treating steam performance as an afterthought.

    🥛 Pro Touch Steam Wands

The KB90 features high-performance Pro Touch steam wands designed to remain much cooler on the outside than conventional steam arms.

    This improves:

    ✅ Barista comfort

    ✅ Safety

    ✅ Cleaning

    ✅ Milk workflow

Milk residue also has less opportunity to bake aggressively onto an extremely hot wand surface.

    Still:

Wipe the steam wand immediately after every use.

    Always.

    🔧 Easy Rebuild Steam Valve

Commercial equipment earns its money by working.

    Downtime costs money.

The KB90's steam valve has therefore been engineered so that servicing can be performed from the front through the steam-knob area rather than requiring major machine disassembly.

This is exactly the kind of design detail we appreciate in serious professional equipment.

A commercial machine should not only perform well.

    It should also be serviceable.

    💡 Barista Lights

Integrated LED lighting illuminates the espresso preparation area.

This may sound minor until you're trying to judge:

    ☕ Espresso flow

    🪞 A bottomless portafilter

    ⚖️ Cup positioning

    🧹 Group cleanliness

in a dark restaurant or evening coffee bar.

Better visibility means a better workflow.

📱 La Marzocco Pro App Compatible

The KB90 electronics support connectivity with the La Marzocco Pro App.

This can support monitoring and adjustment of selected machine parameters and gives operators another way to manage a modern professional installation.

The machine architecture also supports firmware updating.

For multi-site operators or technically managed coffee programmes, connected equipment can simplify oversight and maintenance.

    💧 Water Quality Monitoring

The KB90 includes a water sensor capable of monitoring properties such as conductivity and hardness of incoming water.

    That's important.

    Because water is not just:

    “something the machine needs.”

It is approximately 90%+ of an espresso.

And inappropriate water can destroy an expensive machine surprisingly quickly.

⚠️ Professional Water Treatment Is Essential

A machine like the KB90 should never simply be connected to an unknown water supply.

    Before installation, measure:

    💧 General hardness

    ⚗️ Carbonate hardness / alkalinity

    📊 Conductivity

    🧪 pH

    🧂 Chloride content

    🚰 Daily water consumption

Then select the filtration system accordingly.

The objective is not to remove every mineral.

Coffee needs minerals for good extraction.

The objective is to create water that is:

    ☕ Good for flavour

    🛡️ Safe for the machine

    ♻️ Economical to treat

📊 Consistent throughout the cartridge life

    Contact WB.coffee

For a machine of this capacity, we recommend a proper high-capacity professional water-treatment system, selected according to local hardness and expected daily volume.

    We can help determine:

    • Required cartridge capacity
    • Bypass setting
    • Filter type
    • Flow requirements
    • Replacement schedule
    • Water recipe suitable for specialty coffee

A €20,000+ espresso installation deserves better water planning than a random filter cartridge.

✨ Full Inox – Stainless Steel

    This version is finished in:

    Full Inox stainless steel

    The result is unmistakably professional.

    ✨ Clean

    🏗️ Architectural

    🧼 Practical

    ☕ Timeless

Stainless steel also works beautifully in open kitchens, bakery environments, restaurants and specialty coffee bars where the espresso machine becomes part of the visual identity of the space.

Unlike trend-driven colours, Full Inox rarely looks dated.

    ✅ Perfect For

The La Marzocco KB90 AV ABR 2 Group is designed for:

    ✔️ High-volume specialty coffee shops

✔️ Restaurants with serious coffee programmes

    ✔️ Hotels

    ✔️ Bakeries

    ✔️ Premium offices and hospitality

    ✔️ Roastery tasting rooms

    ✔️ Training centres

✔️ Coffee bars with multiple baristas

✔️ Businesses where speed and ergonomics matter

✔️ Locations wanting espresso recipes controlled by weight

✔️ Bars serving blends and rotating single origins simultaneously

This is not a machine designed primarily to impress on a specification sheet.

It is designed around what happens when a café becomes busy.

👃 CoffeeNose Tip – Automate Repeatability, Not Taste

The ABR system is extremely powerful.

But don't fall into the trap of believing:

    18 g → 36 g = automatically delicious.

    It doesn't.

    A recipe might begin with:

    ⚖️ Ground coffee

    18.0 g

    💧 Beverage

    40.0 g

    ⏱️ Time

    27 seconds

The KB90 can automatically stop the espresso around the target beverage mass.

But the barista still needs to taste:

    🍋 Acidity

    🍯 Sweetness

    🍫 Bitterness

    👅 Body

    🌸 Aroma

    💧 Finish

    Then adjust:

    ⚙️ Grind size

    ⚖️ Dose

    💧 Ratio

    🌡️ Temperature

    The machine gives you repeatability.

Your palate determines what is worth repeating. 👃

🛍️ Fiorenzato F64 EVO PRO SENSE GbW

⚖️ Weight In + Weight Out

This is a particularly logical pairing.

The Fiorenzato F64 EVO PRO SENSE controls:

⚖️ Coffee going INTO the portafilter.

    The KB90 ABR controls:

⚖️ Espresso coming OUT into the cup.

    For example:

    Fiorenzato: 18.0 g ground coffee

    ⬇️

    KB90 ABR: 40.0 g espresso

Now two of the most important recipe variables are automatically controlled by weight.

That gives the barista more time to focus on:

    ☕ Distribution and tamping

    🥛 Milk

    👅 Quality control

    🤝 Customers

For a high-volume specialty coffee bar, that's a seriously efficient workflow.

    🧰 Precision Barista Tools

    Complete the espresso station with:

    🌀 Professional WDT tools

    ⭕ Automatic portafilter cleaner

    🔘 Automatic Precision tampers

    🧺 VST / precision baskets

    🪞 Bottomless portafilters

    ⚖️ Calibration scales

Even with ABR, puck preparation still determines how evenly water passes through the coffee.

    Automation doesn't fix channeling.

    🚿 Rhino Mini Rinser Spinjet

Pair the KB90 with one or more Rhino Spinjet pitcher rinsers.

The high-pressure rotating spray quickly clears fresh milk from:

    🥛 Milk pitchers

    🍫 Chocolate jugs

    🌱 Plant-based milk pitchers

    🧋 Mixing vessels

A dedicated pitcher rinser can dramatically improve workflow beside a high-capacity espresso machine.

For a commercial bar, positioning matters:

Grinder → Espresso machine → Milk station → Rinser

A well-designed workflow can save more time than simply buying faster equipment.

    🧼 Cafetto EVO

A Steam Flush Does Not Replace Backflushing

The KB90 helps keep the groups clean automatically during service.

But coffee oils still accumulate inside the brewing system.

Use Cafetto EVO Espresso Machine Cleaner for the prescribed detergent cleaning cycle.

    Combine it with:

    ⬛ Correct blind baskets

    🪥 Professional group-head brushes

    🚿 Group-head spray brushes

    🧹 Dedicated barista cleaning cloths

A machine this good deserves proper maintenance.

And WB.coffee this tasty deserves a clean machine.

    🥛 Cafetto MFC

High milk volume means milk hygiene matters just as much as coffee cleaning.

Use a dedicated milk cleaner such as Cafetto MFC for compatible milk-contact equipment, pitchers and removable components.

    Milk leaves:

    🥛 Protein

    🧈 Fat

    🦠 Organic residue

    👃 Sour aromas

Water alone does not remove all of it.

Steam wands should be wiped and purged after every use, while milk equipment requires regular deeper cleaning.

    💧 Professional Water Filtration

For the KB90, water treatment is not an optional accessory.

It is part of the machine installation.

Contact WB.coffee for a high-capacity solution selected according to:

    📍 Location

    💧 Water hardness

    ☕ Expected coffees per day

    🚰 Peak flow requirements

    🧪 Desired mineral composition

    ♻️ Cartridge efficiency

A properly sized professional filtration system generally offers:

💶 Lower filtration cost per litre

    ♻️ Less cartridge waste

    🛡️ Better machine protection

    ☕ More consistent flavour

    📆 Predictable maintenance intervals

🏰 House Espresso – Fortezza di Weesp

For a traditional but genuinely high-quality house espresso programme, Fortezza di Weesp is a fantastic match.

100% Arabica specialty coffee with flavour impressions of:

    🍫 Artisanal chocolate

    🌰 Walnut

    🍯 Molasses

    🍇 Dried plum

The syrupy body works beautifully as:

    ☕ Espresso

    🥛 Cappuccino

    🤎 Flat white

    🍫 Mocha

Program the house recipe into ABR and give every barista a consistent starting point.

    🍫 The Chocolatier's Brew

For customers who love round, sweet, comforting espresso:

    The Chocolatier's Brew

A 100% Arabica specialty blend with impressions of:

    🌰 Hazelnut

    🍮 Caramel

    🌼 Vanilla

    🍇 Dried fruit

    🍫 Praline

Fantastic as espresso and particularly delicious with milk.

    🍓 FJ – Fruity & Juicy

Dedicate the second brew group to something more modern.

FJ – Fruity & Juicy gives you a brighter, fruit-forward espresso profile.

Independent brew boilers mean you can run:

    Group 1 🏰

    House blend at one temperature.

    Group 2 🍓

Modern espresso or single origin at another temperature.

That's where a two-group machine with independent boilers becomes much more interesting than simply “two places to make espresso.”

    🌍 Rotating Single-Origin Espresso

Use the second group for a rotating coffee programme:

    🍓 Kenya Currant Crush

    🌸 Ethiopia Guji Majesty

💎 Guatemala Geisha – Finca Inferno

    🍍 Pineapple Express

    🍊 Fernando Díaz Orange Bourbon

    🧪 Limited WB.coffee experimental lots

    ABR is especially useful here.

Different coffees produce different flow and post-extraction drip behaviour.

Drip Prediction helps maintain the target beverage mass even when moving between very different coffees.

🎓 Commercial Barista Training @ Amsterdam Coffee Lab

Premium equipment only performs as well as the people using it.

At Amsterdam Coffee Lab in Weesp, we can help teams understand:

    ⚙️ Grinder adjustment

    ⚖️ Dose and beverage yield

    📊 Brew ratios

    ⏱️ Extraction

    👅 Sensory calibration

    🥛 Milk texture

    🧼 Cleaning and maintenance

    💧 Water quality

    🚀 Workflow optimisation

Training becomes particularly powerful with an ABR machine because once the recipe has been defined, the machine can help every barista reproduce it.

Consistency should not mean removing skill.

It means allowing skill to be reproduced throughout the team.

❤️ Why We Like It at WB.coffee

The KB90 is one of the rare commercial espresso machines where the most interesting features are not there merely because the engineers could add them.

    They solve actual café problems.

    🔄 Straight-In Portafilter

Repetitive wrist movement is a genuine occupational issue.

La Marzocco redesigned one of the oldest conventions in espresso-machine design rather than simply accepting it.

    💨 Steam Flush

Busy baristas don't always flush groups as consistently as they should.

The machine does part of that work automatically.

    ⚖️ ABR + Drip Prediction

We develop espresso recipes by weight.

So having the espresso machine measure the beverage directly makes far more sense to us than pretending volume and mass are always interchangeable.

    🌡️ Independent Brew Boilers

A house blend and a modern single origin do not necessarily want the same brewing temperature.

The KB90 lets you treat them as different coffees.

    🔧 Serviceability

Linea PB-based electronics and components, front-serviceable steam valves and a machine designed around professional maintenance matter enormously once the equipment is working every day.

For us, the KB90 is not primarily about luxury.

    It's about:

    workflow

    ⚖️ repeatability

    👨‍🍳 barista ergonomics

    🧼 cleanliness

    🔧 serviceability

    great espresso at serious volume

And the ABR version is the one we would choose for a modern specialty coffee operation.

If your grinder controls the dose by weight and your KB90 controls the espresso by weight, the repetitive variables are automated.

That leaves the barista free to do what machines still can't:

taste, adjust and look after the customer. 👃☕
