Traditional automatic espresso machines use volumetric dosing.
They measure the quantity of water passing through the machine and stop the extraction after the programmed amount has been delivered.
That's convenient—but the amount of espresso actually reaching the cup can still vary.
Coffee absorbs water.
Flow changes.

Different beans behave differently.
