The sealing ring primarily serves as a vibration and shock protection between the grinder and the bean container. Since the bayonet lock can never press the bean container firmly against the grinder.
The flexible silicone ring sits inside that metal collar to form a snug seal against the hopper neck, preventing bean wobbling and stray grounds or dust from entering the grinding chamber.
If the sealing ring is missing, it may even be the case that the safety switch of the grinder is not activated, and the espresso grinder does not turn on at all. This problem occurs more often with the newer Mahlkönig espresso grinders.
