⚙️ 40 mm Conical Grinding System
Baratza's classic conical-burr grinders use a 40 mm steel burr architecture designed for balanced, sweet coffee across a wide grind range. Baratza describes the broad upper auger blades as pulling and pre-cutting the beans before they reach the finer cutting surfaces lower down.
The system consists of two main cutting components:
⚙️ Central Cone Burr
This M3 burr.
and
⭕ Outer Ring Burr
The stationary burr surrounding it.
The distance between those two surfaces determines the grind size.
Both need to be correctly installed and in good condition for the grinder to perform properly.
☕ Excellent for Filter Coffee
The classic Encore with its M3 burr is especially popular as an accessible filter-coffee grinder.
Baratza gives the current Encore:

covering a broad range from fine coffee through coarse cold-brew grinding.

For demanding unpressurised espresso, we would normally recommend a grinder with finer adjustment resolution such as the Encore ESP or a dedicated espresso grinder.
🔩 Important – M3 Uses the Classic Threaded Mount
This M3 burr belongs to Baratza's traditional conical-burr architecture.
It should not be confused with the:
M2 Quick-Release Cone Burr
used by the:
☕ Encore ESP
☕ Encore ESP Pro.
The ESP generation uses a completely different Quick-Release mounting system. Baratza explicitly states that its M2 Quick-Release burr is compatible only with Encore ESP and Encore ESP Pro.
🆚 M3 vs M2 – Which Burr Do I Need?
There are several Baratza burrs with very similar names, so check carefully before ordering.

Baratza currently lists both the M3 and threaded M2 as compatible with the classic Encore and Virtuoso+, while the Quick-Release M2 belongs exclusively to the ESP platform.
⚙️ M3 or M2 Upgrade for an Encore?
If you're simply restoring a classic Encore to its original-style grinding configuration:
choose the M3.
Baratza lists the M3 directly among the current replacement parts for the Encore.
Want to change to the M2 geometry instead?
Baratza also sells the threaded M2 SP0101069, which is officially compatible with the Encore and Virtuoso+.
The M2 is also the burr geometry used in the current Virtuoso+ platform.

If the existing M3 is damaged and you simply want the grinder back to its familiar performance:
replace M3 with M3.
If you're already opening the grinder and considering a different burr geometry, the threaded M2 can be worth considering.
Do not confuse either of them with the Quick-Release M2 for Encore ESP.
⭕ Check the Ring Burr Too
The central cone burr is only half of the grinding system.
Inspect the surrounding:

The Encore ESP uses a different ring-burr holder architecture.

🔧 When Should You Replace an M3 Burr?
Steel burrs are durable.
Do not automatically replace them just because the grinder is several years old.
Consider replacing the cone when you find:

🔧 Significant mechanical damage
⚙️ Clearly deteriorated grinding performance after eliminating other causes
Before blaming the burr, inspect:

Replacing a burr is the ideal opportunity to remove accumulated:

A freshly installed burr inside several years of old coffee residue is not our idea of a complete service.

Once everything is correctly assembled:
1. Check that the burr is seated correctly
Do not force adjustment components into place.
2. Start relatively coarse
Make sure the grinder runs normally before pushing towards finer settings.
3. Grind a small amount of coffee
Listen for:

✅ Consistent bean feeding
✅ Normal grounds output
4. Dial in again
Do not assume your old grind number will behave identically after replacing burrs or alignment components.
